Here's a quick update on how our ETHWaterloo project evolved in the following months.
There are now 3 sample projects that you can deploy straight into containers with a single command:

Besu Java plugin project using the new Besu Plugins API: https://github.com/ericglau/HyperledgerBesuGenerators/tree/master/besu-appsody-stacks/java-besu-plugins
With the Besu plugin project, once you start the project with the "appsody run" command, you can just go ahead and change your code, and the running plugin will be automatically rebuilt and redeployed!
