DoroHotels was created to improve food safety and kitchen hygiene in hotel and commercial kitchens. The idea is to use AI, computer vision, robotics and ingredient traceability to continuously observe kitchen environments and identify food-safety and hygiene events.

The core principle of the project is:

AI detects. Humans decide.

DoroHotels is designed as an inspection system rather than a generic surveillance or cleaning robot.

What it does

DoroHotels observes kitchen environments using cameras, sensors and RFID/QR inputs. Its AI / Computer Vision engine analyses these inputs and converts relevant observations into structured events.

The system focuses on:

  • Personal hygiene detection
  • Mask detection
  • Glove detection
  • Cough and sneeze detection
  • Ingredient tracking
  • Autonomous navigation
  • Obstacle detection
  • Real-time alerts
  • Digital dashboard
  • Kitchen heatmap
  • Report generation

Detected events can be processed by the Rule Engine, sent through the Alert System, recorded in the Database and displayed to hotel management through the Web Dashboard.

How it works

The complete inspection follows six stages:

Observe → Understand → Detect → Decide → Alert → Record

  1. Observe — Cameras, sensors and RFID/QR inputs capture information from the kitchen.
  2. Understand — The AI / Computer Vision engine analyses the captured feeds.
  3. Detect — Event Detection identifies food-safety or hygiene events such as missing masks or gloves.
  4. Decide — The Rule Engine determines how the detected event should be handled.
  5. Alert — Hotel management receives alerts through the Web Dashboard.
  6. Record — Events are stored in the Database for later review.

What I learned

This project helped me understand how multiple technologies can work together as one system. I explored the relationship between computer vision, autonomous robotics, event detection, rule-based decision systems, ingredient traceability and web dashboards.

A key learning was that AI should support human decision-making rather than completely replace it. This led to the Human + AI model used by DoroHotels.

How it was built

DoroHotels follows a layered architecture:

Cameras + Sensors + RFID/QR → AI / Computer Vision → Event Detection → Rule Engine → Alert System / Database → Web Dashboard → Hotel Management

The robotic component provides autonomous movement through the kitchen and carries the cameras, sensors and RFID/QR readers needed by the inspection system.

The project is designed around Privacy-by-Design, with its purpose focused specifically on food safety and kitchen hygiene rather than generic hotel surveillance.

Challenges

One of the main challenges is designing a system that can reliably operate in a busy commercial kitchen while handling different people, ingredients, obstacles and continuously changing conditions.

Another challenge is connecting AI detection with meaningful events, rules, alerts and records so that the information is useful to hotel management.

DoroHotels is designed as an evolving innovation project, with future development planned around improving its capabilities while maintaining its core focus on food safety, kitchen hygiene and human oversight.
