What's next for Ahumador de Chile Chipotle

At present Chihuahua produces 85 % of the national production, with 11 thousand tons of chili chipotle. which generates approximately an economic apportionment of 765 million in weight. Turning it into the first production place at national level, of which 70 % remains in the country and 30 % is exported to the United States of America. The main industrial buyers are: La Costeña and San Marcos. For the production of Chili Chipotle, it is necessary to leave that the green product ripens in the plant until it returns of red color, and later to dry off in handmade stoves of firewood, which consume approximately 4 Tons of fire woods per every 800 Kg of product, since it is thanks to the heat and the smoke, that the jalapeño is dehydrated and smoked. The main disadvantage of this process is the deforestation and the contamination that takes place to manage to obtain finished of the chili chipotle.

In Chihuahua, the chili production is developed in the regions Northwest and Center - south, being six municipalities that stand out: The ascension has contributed with a 103 thousand tons’ annual average, Buenaventura with 42 thousand, Delicias with 39 thousand, Camargo with 35 thousand, with 31 thousand and finally, Jiménez with 28 thousand. The average of the price for Kg of chili chipotle is approximately of $ 55. 00 MX, what turns it into the third product with more production in the State, after the milk and the nut.

A possible solution to diminish the deforestation and the contamination to the environment, which generates the process of smoked of chili chipotle, the automation of a stove is a smoking person, with control and visualization in real-time. Other one of the advantages that it presents is increasing the production and diminishing the time, since approximately the process lasts from 2 until 3 days, depending on the climate, therefore the producers generate 2 batches per week for every stove.
